4 oz (125 g) margarine
6 oz (180 g) Castor sugar
6 oz (180 g) self raising flour (or 4 oz (125 g) flour plus 1 teasp. baking powder)
2 eggs
1/4 pint (150 ml) milk
Pinch of salt
Grated rind of 2 lemons
Beat margarine and sugar until soft. Gradually add all ingredients. Bake for 1 hour in greased loaf tin in moderate oven, Gas Mark 4. Combine juice of 2 lemons with 1 tablespoon of castor sugar. When cake is cooked pour this over while still hot and in the tin.
